If you ever try one recipe from a blog, please try this one. You will fall over in orgasmic delight. Ummm, I mean you will die from taste bud happiness. They're amazing ok!!!
I got this recipe from Pioneer Woman whom I adore.
Please...make it. Make it now, and eat one right away while it's still warm. Oh. My. Word.
Because life is too short to worry about a few extra calories right!?! Oh, and did I mention they are super simple?! Easy, peasy! GO!!
*Note, mine weren't as dark in color as the ones in the picture but I didn't have as much cinnamon as I needed. They were still fabulous though!
Muffins that Taste Like Donuts...or Monuts...or Duffins
1 3/4 C flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/3 C oil
3/4 C sugar
1 egg
3/4 C milk
Topping:
1/4 C butter, melted
1/3 C sugar
1 T cinnamon
Combine flour, baking powder, salt, nutmeg, and cinnamon. In another bowl combine oil, sugar, egg, and milk. Add dry ingredients and stir to combine. Bake at 350 for 15-20 minutes in a greased muffin tin.
When the muffins are done shake them out on a towel still warm. Melt your butter and have your cinnamon and sugar combined. Then, oh glory, roll the muffin in the butter and then the cinnamon sugar (coat that sucker!). You may actually need to use 1/2 C butter and another bunch of sugar and cinnamon because they soak that stuff up. You can let them sit a minute to absorb all of the goodness but remember to eat one right away!!

Yes!! Now I can make them! I even have all the ingredients on hand, so I have no excuse. But I'll probably come up with one anyway, so hows about you just make me a batch?? :)
